Summer Chicken Wraps

 Here’s a healthy and refreshing recipe for Summer Chicken Wraps:


Ingredients:


For the Chicken:


2 boneless, skinless chicken breasts


1 tablespoon olive oil


Salt and pepper to taste


1 teaspoon paprika


1 teaspoon garlic powder


1/2 teaspoon cumin (optional)



For the Wraps:


4 whole wheat or spinach tortillas (or gluten-free tortillas)


1 cup mixed greens (such as spinach, arugula, or lettuce)


1/2 cucumber, thinly sliced


1 cup cherry tomatoes, halved


1 avocado, sliced


1/2 red onion, thinly sliced


1/4 cup crumbled feta cheese (optional)



For the Dressing (Optional):


1/4 cup Greek yogurt


1 tablespoon lemon juice


1 teaspoon Dijon mustard


Salt and pepper to taste


A pinch of dried herbs (like oregano or basil)



Instructions:


1. Prepare the chicken: Season the chicken breasts with olive oil, salt, pepper, paprika, garlic powder, and cumin (if using). Heat a skillet or grill over medium-high heat and cook the chicken for 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 74°C). Once cooked, remove from heat and let it rest for a few minutes before slicing it into thin strips.



2. Make the dressing (optional): In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, and a pinch of dried herbs. Season with salt and pepper to taste.



3. Prepare the wraps: Lay out the tortillas on a flat surface. Evenly distribute the mixed greens, cucumber, cherry tomatoes, avocado, red onion, and crumbled feta cheese (if using) onto each tortilla.



4. Assemble the wraps: Place the sliced chicken on top of the veggies, then drizzle with the dressing if desired. Fold in the sides of the tortilla and roll it up tightly.



5. Serve: Slice the wraps in half and serve immediately. You can also wrap them in parchment paper or foil to take them on-the-go.
