 Spicy Instant Pot Carrot Soup is a quick and easy soup that combines the natural sweetness of carrots with a spicy kick. Using the Instant Pot helps to make this dish fast, while maintaining a rich, creamy texture and vibrant flavors. Here's how to make it:


Ingredients:


1 tablespoon olive oil


1 medium onion, chopped


2 cloves garlic, minced


1-inch piece of fresh ginger, grated


1 teaspoon ground cumin


1/2 teaspoon ground coriander


1/4 teaspoon cayenne pepper (adjust to your heat preference)


4 cups vegetable or chicken broth


4 cups carrots, peeled and chopped (about 4-5 medium carrots)


Salt and pepper to taste


1/2 cup coconut milk (optional, for creaminess)


Fresh cilantro or parsley, for garnish (optional)


Lime wedges, for serving (optional)



Instructions:


1. Sauté the aromatics:


Turn on the Instant Pot and select the "Sauté" function. Add the olive oil to the pot. Once the oil is hot, add the chopped onion, garlic, and grated ginger. Sauté for about 5 minutes, stirring occasionally, until the onion is softened.



2. Add the spices:


Stir in the ground cumin, coriander, and cayenne pepper. Sauté for another 1-2 minutes to toast the spices and bring out their flavors.



3. Add the carrots and broth:


Add the chopped carrots and vegetable (or chicken) broth to the Instant Pot. Stir to combine. Close the lid and set the valve to the "Sealing" position.



4. Pressure cook:


Select the "Manual" or "Pressure Cook" setting and cook on high for 10 minutes. Once the cooking time is up, carefully perform a quick release of the pressure.



5. Blend the soup:


After the pressure is released, open the Instant Pot and use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a regular blender.



6. Finish with coconut milk (optional):


Stir in the coconut milk for added creaminess, and season the soup with salt and pepper to taste. If you like a thinner soup, you can add a little more broth or water.



7. Serve:


Ladle the soup into bowls and garnish with fresh cilantro or parsley, if desired. Serve with lime wedges on the side for a burst of brightness.
