4 ears of corn, husked (or 2 cups frozen corn, thawed)


1 cup cherry tomatoes, halved


1/2 red onion, finely diced


1/2 cup bell pepper, diced (any color)


1 can (15 oz) black beans, drained and rinsed


1/4 cup cilantro, chopped


1/4 cup crumbled feta cheese (optional)



For the Dressing:


3 tablespoons olive oil


2 tablespoons lime juice


1 tablespoon red wine vinegar


1 teaspoon cumin


1 teaspoon chili powder


1/2 teaspoon smoked paprika (optional)


Salt and pepper to taste

Instructions


1. Grill the Corn:


Preheat your grill to medium-high heat.


Brush the corn with a little olive oil and season with salt and pepper.
