 A Shortcut Vegetable Ragu is a quick and flavorful dish that combines hearty vegetables with a rich tomato-based sauce. This easy recipe is perfect when you want the taste of a slow-cooked ragu in a fraction of the time.


Ingredients:


2 tablespoons olive oil


1 onion, finely chopped


2 carrots, diced


2 zucchini, diced


1 bell pepper, diced (red or yellow)


1 eggplant, diced (optional)


3 cloves garlic, minced


1 can (14.5 oz) crushed tomatoes


1 can (6 oz) tomato paste


1/2 cup vegetable broth (or water)


1 tablespoon dried oregano


1 teaspoon dried basil


1/2 teaspoon red pepper flakes (optional, for a little heat)


Salt and pepper, to taste


Fresh basil or parsley, for garnish (optional)


Grated Parmesan cheese (optional, for serving)



Instructions:


1. Sauté the Vegetables:


In a large pan or skillet, heat the olive oil over medium heat. Add the onion and carrots, and cook for 4-5 minutes until the vegetables start to soften.


Add the zucchini, bell pepper, and eggplant (if using). Continue to cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.




2. Add the Garlic:


Stir in the minced garlic and cook for 1 minute, until fragrant.




3. Make the Sauce:


Add the crushed tomatoes, tomato paste, vegetable broth, oregano, basil, and red pepper flakes (if using) to the pan. Stir to combine.


Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened and the vegetables are fully cooked.




4. Season:


Taste the ragu and adjust the seasoning with salt and pepper as needed.




5. Serve:


Serve the vegetable ragu over your favorite pasta, such as spaghetti, penne, or fettuccine. Garnish with fresh basil or parsley and a sprinkle of grated Parmesan cheese, if desired.





Tips:


You can use any vegetables you have on hand, such as mushrooms, spinach, or even sweet potatoes.


To make the ragu even richer, add a splash of red wine when cooking the vegetables or during the simmering stage.
