Raspberry Crumble Bars are a delicious treat with a fruity filling and a buttery, crumbly topping. Here's a simple recipe for making them:
Ingredients:
For the crust and crumble topping:
1 1/2 cups all-purpose flour
1 cup rolled oats
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
1 teaspoon vanilla extract
For the raspberry filling:
2 cups fresh or frozen raspberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
Instructions:
1. Preheat the oven:
Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper or lightly grease it.
2. Make the crumble topping:
In a large bowl, combine the flour, oats, sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your hands to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the vanilla extract.
3. Prepare the raspberry filling:
In a medium saucepan, combine the raspberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the raspberries release their juice and the mixture thickens (about 5-7 minutes). Remove from heat and set aside to cool slightly.
4. Assemble the bars:
Press about 2/3 of the crumble mixture into the bottom of the prepared pan to form the crust. Spread the raspberry filling evenly over the crust. Sprinkle the remaining crumble mixture on top of the raspberries.
5. Bake:
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the raspberry filling is bubbling.
6. Cool and cut:
Allow the bars to cool completely in the pan before cutting into squares or bars. For easier slicing, you can chill the bars in the fridge for a bit after they’ve cooled to room temperature.
These raspberry crumble bars are a sweet, tangy, a
nd satisfying dessert or snack, perfect for any occasion!
