Ingredients:
1 cup cooked quinoa (about 1/2 cup uncooked quinoa)
1 lb ground beef (or turkey for a leaner option)
1/2 cup cooked bacon, chopped into small pieces (about 4-5 strips)
1/2 cup shredded cheddar cheese
1/4 cup finely chopped onion
1 egg
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 tsp garlic powder
Salt and pepper to taste
1/4 cup breadcrumbs (optional, for extra binding)
Chopped pickles or pickle relish (optional, for topping)
Fresh parsley (optional, for garnish)

Instructions:
1. Prepare the Quinoa:
Cook 1 cup quinoa according to package directions. Once cooked, set it aside to cool.
2. Cook the Bacon:
In a pan, cook the bacon until crispy, then chop it into small pieces. Set aside to cool.
3. Mix the Ingredients:
Preheat your oven to 375°F (190°C).
In a large bowl, combine the cooked quinoa, ground beef, chopped bacon, shredded cheddar cheese, chopped onion, egg, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper.
If the mixture feels too wet, you can add breadcrumbs for extra binding.
4. Shape the Bites:
Grease a mini muffin tin or line it with paper liners.
Spoon the mixture into each muffin cup, pressing down gently to form mini "bites."
5. Bake:
Bake the quinoa bites in the preheated oven for 18-20 minutes, or until the meat is cooked through and the tops are golden brown.
6. Serve:
Once baked, remove from the oven and let cool slightly.
Optionally, top each bite with a small piece of pickle or a dollop of relish. Garnish with fresh parsley if desired.
