Ingredients:


For the Chicken:


1 lb boneless, skinless chicken breasts or thighs


2 tbsp olive oil


2 tbsp lemon juice


2 cloves garlic, minced


1 tsp dried oregano


1/2 tsp paprika


1/2 tsp cumin


Salt and pepper, to taste



For the Bowl:


4 cups cauliflower rice (cooked)


1 cup cherry tomatoes, halved


1 cup cucumber, diced


1/4 cup red onion, thinly sliced


1/4 cup Kalamata olives, sliced


1/4 cup crumbled feta cheese (optional)



For the Tzatziki Sauce:


1/2 cup Greek yogurt (full-fat or low-fat)


1/4 cup cucumber, grated and squeezed to remove excess water


1 clove garlic, minced


1 tbsp fresh dill, chopped


1 tbsp lemon juice


Salt and pepper, to taste

Instructions:


1. Marinate the Chicken:


1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.



2. Add the chicken, coating it well in the marinade. Cover and let it marinate for at least 30 minutes (or up to 4 hours in the refrigerator).




2. Cook the Chicken:


1. Heat a skillet or grill pan over medium heat.



2. Cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).



3. Let the chicken rest for 5 minutes, then slice into strips.




3. Make the Tzatziki Sauce:


1. In a small bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper.



2. Chill the sauce in the refrigerator while assembling the bowls.




4. Prepare the Bowl Base:


1. Cook the cauliflower rice according to package instructions or sauté in a pan with a little olive oil and salt until tender.




5. Assemble the Bowls:


1. Divide the cauliflower rice among bowls.



2. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese (if using).
