Grilled Caprese Chicken

Here’s a simple and delicious recipe for Grilled Caprese Chicken, a flavorful dish that combines tender grilled chicken with the classic Italian flavors of tomatoes, fresh mozzarella, basil, and balsamic glaze.

---

Ingredients

4 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and pepper, to taste

2 cups cherry tomatoes, halved

8 oz fresh mozzarella, sliced

1/4 cup fresh basil leaves, chopped

2 tbsp balsamic glaze (or balsamic vinegar reduced to a syrup)

1 tbsp balsamic vinegar (optional, if not using balsamic glaze)

1 tsp dried oregano (optional)

---

Instructions

1. Prepare the Chicken

Preheat your grill to medium-high heat.

Brush the chicken breasts with olive oil and season both sides with salt, pepper, and optional dried oregano.

Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from the grill and set aside.

2. Prepare the Caprese Topping

While the chicken is grilling, slice the mozzarella and halve the cherry tomatoes.

Once the chicken is done, top each breast with slices of fresh mozzarella and a handful of cherry tomato halves.

3. Melt the Cheese

Close the grill lid and let the chicken sit on the grill for an additional 1-2 minutes to allow the cheese to melt over the chicken.

4. Garnish and Serve

Remove the chicken from the grill and drizzle with balsamic glaze or reduced balsamic vinegar.

Sprinkle with fresh basil leaves for garnish and serve immediately.

Tips

For extra flavor, marinate the chicken in a mixture of olive oil, lemon juice, garlic, and herbs for 30 minutes before grilling.

You can use a grill pan or broiler if you're not using an outdoor grill.

Serve the chicken with a side of pasta, salad, or grilled vegetables for a complete meal.

Enjoy your Grilled Caprese Chicken, a fresh and vibrant dish that’s perfect for a light summer dinner or any time you want to enjoy the classic Caprese flavors!
