Ingredients


For the Dish


2 boneless, skinless chicken breasts, cut into bite-sized pieces


1 tbsp olive oil


1 red bell pepper, diced


1 zucchini, sliced


1/2 cup cherry tomatoes, halved


1/4 cup Kalamata olives, sliced


2 cloves garlic, minced


1 cup dry pasta (penne, farfalle, or spaghetti work well)


2 1/2 cups chicken broth (low-sodium)


1/2 tsp dried oregano


1/2 tsp dried basil


Salt and pepper, to taste


1/4 cup crumbled feta cheese


Fresh parsley or basil, chopped (for garnish)

Instructions


1. Cook the Chicken


Heat the olive oil in a large, deep skillet or sauté pan over medium-high heat.


Season the diced chicken with salt, pepper, and half of the oregano and basil.


Add the chicken to the skillet and cook for 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the pan and set it aside.



2. Sauté the Vegetables


In the same skillet, add the diced red bell pepper, zucchini, and cherry tomatoes. Cook for 3-4 minutes, until the vegetables begin to soften.


Add the minced garlic and cook for 1 more minute, until fragrant.



3. Cook the Pasta


Add the dry pasta to the skillet, followed by the chicken broth. Stir everything to combine, making sure the pasta is mostly submerged in the liquid.
