Ingredients:


2 tbsp olive oil


1 lb boneless, skinless chicken breasts or thighs, diced


1 small onion, diced


1 bell pepper, diced (optional)


1 can (15 oz) black beans, drained and rinsed


1 cup corn kernels (fresh, frozen, or canned)


1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)


1 packet taco seasoning (or homemade taco seasoning)


1/2 cup salsa (mild, medium, or spicy, based on preference)


1 1/2 cups shredded cheddar cheese (or Mexican blend)


1/4 cup sour cream (optional)


Fresh cilantro, chopped (for garnish)

Instructions:


1. Cook the Chicken:


1. Heat olive oil in a large skillet over medium-high heat.



2. Add the diced chicken and season with salt, pepper, and taco seasoning.



3. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
