BLT Egg Salad Jars


BLT Egg Salad Jars are a fun, portable way to enjoy the classic BLT sandwich in a salad form, layered in a mason jar for easy meal prep. The creamy egg salad pairs wonderfully with crispy bacon, lettuce, and tomatoes. Here's a simple recipe:


Ingredients:


For the Egg Salad:


6 large eggs, hard-boiled and chopped


1/4 cup mayonnaise (or Greek yogurt for a lighter option)


1 tbsp Dijon mustard


1 tbsp fresh dill, chopped (optional)


1 tbsp lemon juice or apple cider vinegar


Salt and pepper, to taste



For the BLT Layer:


6 strips of cooked bacon, crumbled or chopped


1 medium tomato, diced


2 cups lettuce (such as Romaine, iceberg, or mixed greens), chopped



For the Jars:


4 mason jars (16 oz or larger)



Instructions:


1. Make the Egg Salad:


In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, dill (if using), lemon juice or vinegar, salt, and pepper. Stir gently until well mixed. Adjust the seasoning as needed.




2. Prepare the BLT Layers:


Cook the bacon until crispy and crumble it into small pieces.


Dice the tomato and chop the lettuce into bite-sized pieces.




3. Assemble the Jars:


Layer the ingredients in the mason jars starting with the egg salad at the bottom (about 1/4 to 1/3 of the jar).


Add a layer of crumbled bacon on top of the egg salad.


Add a layer of diced tomatoes, then top with the chopped lettuce.




4. Seal and Refrigerate:


Seal the jars with the lids and refrigerate for up to 3 days. The layers will stay fresh and the salad will be easy to grab for lunches or snacks.




5. Serve:


When ready to eat, shake the jar gently to mix the ingredients or spoon it out into a bowl. You can also serve it with crackers, bread, or enjoy it straight from the jar!
