Goat Curry Recipe (Chettinad Goat Kulambu)Chettinad Goat Curry Recipe Yields: 4 servings Prep time: 20 minutes Cook time: 1 hour 30 minutes Ingredients: * 1 kg goat meat, cut into medium pieces * 1 tbsp Chettinad masala powder * 1 tbsp coriander powder * 1 tsp turmeric powder * 1 tsp red chili powder * 1 tsp garam masala * 1 tsp fenugreek seeds * 1 tsp peppercorns * 1 tsp cumin seeds * 1/2 tsp cloves * 1/2 tsp cinnamon * 1/2 tsp cardamom * 1/4 cup coconut oil * 1 onion, chopped * 2 tomatoes, chopped * 2 green chilies, slit * 1 tbsp ginger-garlic paste * 1 cup coconut milk * 2 cups water * Salt to taste * Fresh coriander leaves, for garnish Instructions: * Marinate the goat: In a bowl, combine the goat meat with Chettinad masala powder, coriander powder, turmeric powder, red chili powder, garam masala, fenugreek seeds, peppercorns, cumin seeds, cloves, cinnamon, cardamom, and salt. Mix well and marinate for at least 30 minutes. * Heat the oil: Heat the coconut oil in a pressure cooker or a deep pot. Add the chopped onion and fry until golden brown. * Add the spices: Add the ginger-garlic paste and green chilies. Fry for a few seconds until fragrant. * Add the goat: Add the marinated goat meat to the pressure cooker. Stir well and cook for 2-3 whistles on medium heat. * Add tomatoes and coconut milk: Once the pressure is released, add the chopped tomatoes and coconut milk. Stir well and cook for another 10-15 minutes on low heat until the goat is tender. * Adjust seasoning: Adjust the seasoning with salt and pepper. * Serve: Garnish with fresh coriander leaves and serve hot with steamed rice or roti. Tips: * You can adjust the spice level according to your preference. * If you don't have Chettinad masala powder, you can make it at home by dry roasting and grinding coriander seeds, cumin seeds, red chilies, fenugreek seeds, peppercorns, cloves, cinnamon, and cardamom. * For a richer flavor, you can add a few curry leaves while cooking the goat.
