1 cup dried lentils (green or brown), rinsed

2 carrots, chopped

4 cups vegetable broth (or chicken broth)
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground turmeric (optional)

2 cups spinach or kale (optional)

Instructions:
1. Sauté the Vegetables:
Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until softened.
2. Add Spices and Lentils:
Stir in cumin, paprika, turmeric (if using), salt, and pepper. Add the rinsed lentils, diced tomatoes, and vegetable broth. Stir everything together.
