What is your best family recipe?

 One of my favorite family recipes is Chicken and Rice Casserole. It’s a comforting, easy-to-make dish that’s perfect for busy nights when you want something hearty and delicious. It’s also very customizable, so you can adjust it to your family’s tastes!

Chicken and Rice Casserole


Serves: 4-6

Prep Time: 10 minutes

Cook Time: 45-50 minutes

Ingredients:


4 boneless, skinless chicken breasts (or thighs)


1 cup long-grain white rice (uncooked)


2 cups chicken broth


1 can cream of chicken soup (or mushroom soup for a twist)


1 medium onion, chopped


1 cup frozen peas or mixed veggies (optional)


1 tsp garlic powder


1 tsp onion powder


Salt and pepper, to taste


1 cup shredded cheddar cheese (optional for topping)

Instructions:


1. Preheat Oven: Preheat your oven to 375°F (190°C).



2. Prepare the Casserole Dish:


In a 9x13-inch baking dish, combine the uncooked rice, chicken broth, and cream of chicken soup.


Stir in chopped onion, garlic powder, onion powder, salt, and pepper. If using, add the frozen peas or mixed veggies as well.




3. Season the Chicken:


Season the chicken breasts with salt, pepper, and a sprinkle of garlic powder.


Place the chicken breasts on top of the rice mixture in the casserole dish.




4. Bake:


Cover the casserole dish with aluminum foil and bake for 35-40 minutes, until the chicken is cooked through (internal temperature of 165°F/75°C).


Remove the foil, sprinkle shredded cheddar cheese on top (if using), and bake for an additional 5-10 minutes until the cheese is melted and bubbly.




5. Serve:


Let the casserole rest for 5 minutes before serving. Serve with a side of salad or extra veggies!
