Vegan Toffee

 Vegan Toffee is a delicious, buttery-sweet treat without any dairy! Made with plant-based ingredients, it still delivers the rich, crispy, melt-in-your-mouth texture of traditional toffee. Here’s how you can make it:


Ingredients:


1 cup coconut sugar (or brown sugar)


1/2 cup coconut oil (or vegan butter)


2 tbsp maple syrup


1/4 tsp vanilla extract


Pinch of salt


1/4 cup chopped dark chocolate (make sure it's dairy-free)


1/4 cup crushed nuts (almonds, pecans, or walnuts) – optional



Instructions:


1. Prepare the Pan:


Line a baking sheet with parchment paper or a silicone baking mat.



2. Make the Toffee:


In a medium saucepan over medium heat, combine the coconut sugar, coconut oil, maple syrup, vanilla extract, and a pinch of salt.


Stir constantly and bring the mixture to a gentle simmer. Let it cook for about 8-10 minutes, stirring frequently, until the toffee mixture thickens and reaches the hard crack stage (about 300°F or 149°C on a candy thermometer).


If you don’t have a candy thermometer, you can test by dropping a small amount of the toffee into cold water. If it hardens immediately and cracks when you try to break it, it's done.



3. Pour and Cool:


Once the toffee is ready, carefully pour it onto the prepared baking sheet. Use a spatula to spread it into an even layer.


Let the toffee cool for about 5-10 minutes, then sprinkle the chopped dark chocolate over the top.


Allow the chocolate to melt slightly, then spread it evenly over the toffee with a spatula.


If desired, sprinkle the crushed nuts on top while the chocolate is still warm.



4. Set and Break:


Let the toffee cool completely at room temperature, or you can refrigerate it for quicker results (about 30 minutes).


Once the toffee has fully set, break it into pieces.



Tips:


Storage: Store your vegan toffee in an airtight container at room temperature for up to a week, or refrigerate it for longer shelf life.


Customization: You can sprinkle a pinch of sea salt over the toffee after adding the chocolate for a salted toffee twist.


Chocolate options: Feel free to use dairy-free milk chocolate if you prefer a sweeter option or dark chocolate for a richer taste.
