 Classic Mashed Potatoes

 * Ingredients:

   * 3 lbs Yukon Gold potatoes, peeled and quartered

   * 1/2 cup unsalted butter, cut into pieces

   * 1/2 cup whole milk or heavy cream

   * 1/4 cup sour cream (optional)

   * Salt and pepper to taste

 * Instructions:

   * Boil the Potatoes: Place the potatoes in a large pot of salted water. Bring to a boil, then reduce heat and simmer until tender, about 20-25 minutes.

   * Drain and Steam Dry: Drain the potatoes in a colander. Return the pot to the stovetop over medium heat for 1-2 minutes to steam dry any remaining moisture.
