Hearty Turkey Soup Recipe

Ingredients:
* 2 tablespoons olive oil
* 1 onion, chopped
* 2 carrots, chopped
* 2 celery stalks, chopped
* 4 cloves garlic, minced
* 1 teaspoon dried thyme
* 1/2 teaspoon dried oregano
* 1/4 teaspoon black pepper
* 8 cups turkey broth
* 3 cups cooked turkey meat, shredded
* 1 (15 ounce) can diced tomatoes, undrained
* 1 (15 ounce) can great northern beans, rinsed and drained
* 1/2 cup egg noodles or small pasta
* Salt to taste
* Chopped fresh parsley for garnish (optional)
Instructions:
* Sauté vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery, and cook until softened, about 5 minutes. Add garlic, thyme, oregano, and black pepper, and cook for 1 minute more.
* Combine ingredients: Add turkey broth, turkey meat, diced tomatoes, and beans to the pot. Bring to a simmer, then reduce heat and cook for 15 minutes, or until flavors have blended.
* Cook pasta: Add egg noodles or pasta to the pot and cook according to package directions.
* Season and serve: Season with salt to taste, garnish with chopped parsley (if desired), and serve hot.

* For a richer flavor, use leftover turkey carcass to make homemade turkey broth.
* Add other vegetables like spinach, kale, or corn for extra nutrients.
