 Here's a recipe for a classic Mutton Curry:

Yields: 4 servings

Prep time: 20 minutes

Cook time: 1.5 - 2 hours

Ingredients:

 * 1 lb boneless mutton, cut into 1-inch pieces

 * 1 large onion, chopped

 * 2 tomatoes, chopped

 * 1 tbsp ginger-garlic paste

 * 1 tsp turmeric powder

 * 1 tsp red chili powder

 * 1 tsp coriander powder

 * 1/2 tsp cumin powder

 * 1/4 tsp garam masala

 * 1/4 tsp black pepper powder

 * 1 bay leaf

 * 2-3 green cardamom pods

 * 2 cloves

 * 1-inch cinnamon stick

 * 1 tbsp oil

 * Salt to taste

 * Fresh coriander leaves for garnish

Instructions:

 * Marinate the Mutton: In a bowl, combine the mutton pieces with ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, black pepper powder, salt, and 1/4 cup water. Mix well and marinate for at least 30 minutes, or preferably for 1-2 hours in the refrigerator.

 * Sauté the Onions: Heat oil in a pot or pressure cooker. Add the chopped onions and sauté until golden brown.

 * Add Spices and Tomatoes: Add the bay leaf, cardamom pods, cloves, and cinnamon stick to the pot. Sauté for a minute, then add the chopped tomatoes and cook until they soften and release their juices.

 * Add Mutton and Cook: Add the marinated mutton pieces to the pot and cook, stirring occasionally, until the mutton is browned on all sides.

 * Simmer or Pressure Cook:

   * Stovetop: Add 1-1.5 cups of water, cover the pot, and simmer on low heat for 1.5-2 hours, or until the mutton is tender.

   * Pressure Cooker: Add 1 cup of water, close the lid, and cook for 2-3 whistles.

 * Adjust and Serve: Once the mutton is cooked, check for seasoning and adjust salt and spices as needed. Garnish with fresh coriander leaves and serve hot with steamed rice, roti, or naan.

Tips:

 * For a richer flavor, use ghee instead of oil.

 * You can add chopped potatoes or carrots to the curry for a heartier meal.

 * To make the curry thicker, blend a portion of the cooked tomatoes and add it back to the pot.

 * If you don't have a pressure cooker, you can cook the mutton in a slow cooker on low for 6-8 hours.
