Recipe apple pie

 Classic Apple Pie Recipe

Yields: 1 pie

Prep time: 30 minutes

Cook time: 1 hour

Ingredients:

 * For the crust:

   * 2 1/2 cups all-purpose flour

   * 1 teaspoon salt

   * 1 cup (2 sticks) cold unsalted butter, cut into small pieces

   * 5-6 tablespoons ice water

 * For the filling:

   * 6-7 medium apples (such as Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and thinly sliced

   * 1/2 cup granulated sugar

   * 1/4 cup all-purpose flour

   * 1 teaspoon ground cinnamon

   * 1/4 teaspoon ground nutmeg (optional)

   * 1 tablespoon lemon juice

 * For the egg wash:

   * 1 egg

   * 1 tablespoon water

Instructions:

Make the crust:

 * In a large bowl, whisk together the flour and salt.

 * Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

 * Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough just comes together. Be careful not to overmix.

 * Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the filling:

 * In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg (if using), and lemon juice. Toss to coat.

Assemble the pie:

 * Preheat oven to 425°F (220°C).

 * On a lightly floured surface, roll out one disc of dough to a 12-inch circle. Carefully transfer it to a 9-inch pie plate.

 * Pour the apple filling into the pie crust.

 * Roll out the second disc of dough to a slightly larger circle. Place it over the filling and trim the edges, leaving about a 1-inch overhang.

 * Crimp the edges of the top and bottom crusts together using your fingers or a fork.

 * Cut a few slits in the top crust to allow steam to escape.

 * Brush the top crust with the egg wash.

 * Bake for 15 minutes at 425°F, then reduce the temperature to 375°F (190°C) and bake for an additional 30-40 minutes, or until the crust is golden brown and the filling is bubbly.

 * Let the pie cool on a wire rack for at least 2 hours before serving.

Tips:

 * For a flaky crust, make sure the butter is very cold and avoid overworking the dough.

 * You can use store-bought pie crust if you prefer.

 * To make a lattice top crust, cut the top crust into strips and weave them over the pie.

 * Serve your apple pie warm with vanilla ice cream, whipped cream, or a dollop of caramel sauce.
