Instructions
1. Make the Cilantro Lime Sauce:
In a small bowl, whisk together the sour cream, cilantro, lime juice, lime zest, garlic, salt, and pepper. Adjust seasoning as needed. Refrigerate until ready to use.
2. Prepare the Black Bean Filling:
Heat olive oil in a skillet over medium heat. Add the onion and cook until softened, about 3 minutes.
Stir in the garlic, cumin, smoked paprika, and chili powder. Cook for 1 minute until fragrant.
Add the black beans, corn (if using), and salsa. Cook for 5-7 minutes, mashing some of the beans with a fork or potato masher. Season with salt and pepper to taste. Remove from heat.
3. Assemble the Tacos:
Place a tortilla on a flat surface. Spoon a portion of the black bean mixture onto one half of the tortilla. Sprinkle with shredded cheese.
Fold the tortilla in half, pressing gently to seal. Repeat with remaining tortillas.
4. Cook the Tacos:
Heat a large skillet over medium heat and lightly grease with olive oil or cooking spray.
Cook the tacos in batches, 2-3 minutes per side, until golden and crispy. Add more oil as needed.
5. Serve:
Drizzle or dollop the cilantro lime sauce over the tacos. Add your favorite toppings and serve warm.

Tips:
For extra crispiness, bake the assembled tacos at 425°F (220°C) for 10-12 minutes, flipping halfway through.
If you want a spicier filling, add diced jalapeños or a dash of hot sauce to the black bean mixture.
These tacos are perfect for weeknight dinners or as a fun meal for gatherings!
