Quick meals

 Here are some quick meal ideas that take less than 30 minutes to prepare:


1. Caprese Salad with Grilled Chicken


Ingredients:


2 chicken breasts


1 cup cherry tomatoes, halved


1 cup fresh mozzarella, cubed


Fresh basil leaves


Olive oil, balsamic vinegar


Salt and pepper



Instructions:


1. Season chicken breasts with salt and pepper, and grill or pan-sear for 5-7 minutes per side.



2. In a bowl, combine tomatoes, mozzarella, and basil.



3. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.



4. Slice chicken and serve on top of the salad.

2. Egg Fried Rice


Ingredients:


2 cups cooked rice (preferably cold)


2 eggs, scrambled


1 cup frozen peas and carrots


2 tbsp soy sauce


1 tbsp sesame oil (optional)



Instructions:


1. Heat a pan with a little oil, and scramble the eggs. Remove from the pan.



2. In the same pan, add frozen peas and carrots, then cook for a couple of minutes.



3. Add cooked rice, soy sauce, and sesame oil. Stir everything together.



4. Add the scrambled eggs back in and stir to combine. Cook for another 2-3 minutes.

3. Chicken Caesar Wraps


Ingredients:


2 cooked chicken breasts, sliced


2 large flour tortillas


2 cups romaine lettuce, chopped


1/4 cup Caesar dressing


1/4 cup shredded Parmesan cheese



Instructions:


1. Lay the tortillas flat and spread Caesar dressing on each.



2. Layer lettuce, chicken, and Parmesan cheese.



3. Roll up the tortillas, folding in the sides as you go.



4. Cut in half and serve.

Ingredients:


1 can black beans, drained and rinsed


1 cup corn kernels (fresh or frozen)


1 tsp taco seasoning


4 soft tortillas


Toppings like avocado, salsa, shredded cheese, and sour cream



Instructions:


1. In a skillet, combine black beans, corn, and taco seasoning. Heat over medium for 5-7 minutes.



2. Warm tortillas in the microwave or on a pan.



3. Spoon the veggie mixture into the tortillas and add your favorite toppings.

Ingredients:


3 eggs


1/2 cup shredded cheese (cheddar, mozzarella, etc.)

1. Cook the pasta according to package instructions.



2. While pasta cooks, heat olive oil in a pan over medium heat. Add garlic and red pepper flakes (if using) and cook for 1-2 minutes.



3. Drain pasta and add it to the garlic oil mixture. Toss to coat the pasta in the oil.



4. Garnish with parsley and Parmesan cheese, and serve.
