 Here are a few easy recipes that are perfect for weeknights:


1. One-Pan Baked Chicken and Veggies


Ingredients:


2 chicken breasts (or thighs)


1 cup baby potatoes, halved


1 cup broccoli florets


2 tbsp olive oil


Salt, pepper, and your favorite seasoning (garlic powder, paprika)



Instructions:


1. Preheat the oven to 400°F (200°C).



2. Place the chicken and veggies on a baking sheet.



3. Drizzle olive oil over everything, and sprinkle with salt, pepper, and seasoning.
