Podi Idli Recipe (Podi Mini Idli)

 


Here's a recipe for Podi Idli, a delicious and easy South Indian snack:

Yields: 4 servings

Ingredients:

 * 8-10 large idlis (store-bought or homemade)

 * 1/4 cup idli podi (store-bought or homemade)

 * 2 tablespoons ghee or oil

 * Fresh coriander leaves, for garnish

For Homemade Idli Podi (optional):

 * 1/4 cup chana dal (Bengal gram)

 * 1/4 cup urad dal (black gram)

 * 1/4 cup roasted peanuts

 * 2-3 dried red chilies

 * 1 teaspoon cumin seeds

 * 1/2 teaspoon sesame seeds

 * 1/4 teaspoon asafoetida (hing)

 * Salt to taste

Instructions:

1. Make Idli Podi (if making from scratch):

 * Dry roast chana dal, urad dal, peanuts, red chilies, cumin seeds, and sesame seeds in a pan over low heat until fragrant and lightly browned. Be careful not to burn them.

 * Let the roasted ingredients cool completely.

 * Grind the roasted ingredients, asafoetida, and salt to a fine powder using a spice grinder or mortar and pestle. Store in an airtight container.

2. Prepare the Idlis:

 * If using store-bought idlis, steam them for a few minutes to soften them.

 * Cut the idlis into small cubes.

3. Cook the Podi Idli:

 * Heat ghee or oil in a pan over medium heat.

 * Add the cubed idlis and sauté for 2-3 minutes until lightly golden brown.

 * Sprinkle idli podi over the idlis and toss gently to coat evenly.

 * Cook for another minute, or until the podi is fragrant.

4. Serve:

 * Garnish with fresh coriander leaves and serve hot.

Tips:

 * For extra flavor, temper the idlis with mustard seeds and curry leaves before adding the podi.

 * Adjust the amount of idli podi to your taste.

 * You can use leftover idlis for this recipe.

 * Podi Idli can be enjoyed as a snack or a light breakfast.
