Ingredients:
* 1 lb firm tofu, cut into 1-inch cubes
* 1 large onion, chopped
* 1 green bell pepper, chopped
* 1 red bell pepper, chopped
* 2 cloves garlic, minced
* 1-inch piece ginger, minced
* 1 large tomato, chopped
* 1 teaspoon cumin seeds
* 1/2 teaspoon turmeric powder
* 1/4 teaspoon red chili powder (adjust to taste)
* 1/2 teaspoon coriander powder
* 1/4 teaspoon garam masala
* 1/2 teaspoon salt, or to taste
* 2 tablespoons oil
* 1 tablespoon tomato paste (optional)
* Fresh cilantro, for garnish
Instructions:
* Prepare the Tofu:
* Gently press the tofu between paper towels to remove excess moisture.
* Cut the tofu into 1-inch cubes.
* Sauté the Aromatics:
* Heat oil in a large pan or wok over medium heat.
* Add cumin seeds and let them sizzle for a few seconds.
* Add chopped onions and sauté until softened and translucent.
* Add minced garlic and ginger and cook for another minute until fragrant.
* Add Tomatoes and Spices:
* Add chopped tomatoes and tomato paste (if using). Cook until the tomatoes soften and release their juices.
* Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir well to combine.
* Cook the Tofu and Vegetables:
* Add bell peppers and cook for 5 minutes, or until slightly softened.
* Add tofu cubes and stir gently to coat with the sauce.
* Cook for another 5-7 minutes, or until the tofu is heated through and the sauce has thickened.
* Serve:
* Garnish with fresh cilantro and serve hot with rice, roti, or naan.
Tips:
* For a richer flavor, you can marinate the tofu in a mixture of spices (like garam masala, turmeric, and red chili powder) and yogurt for 30 minutes before cooking.
* You can add other vegetables to this dish, such as peas, cauliflower, or spinach.
* Adjust the amount of red chili powder to your desired level of spiciness.
* If the sauce becomes too dry, add a little water or vegetable broth.
