Ingredients:
* 250g paneer, cut into cubes
* 1 large onion, chopped
* 2 cloves garlic, minced
* 1-inch piece ginger, minced
* 2 medium tomatoes, chopped
* 1 teaspoon cumin seeds
* 1/2 teaspoon turmeric powder
* 1/4 teaspoon red chili powder (adjust to taste)
* 1/2 teaspoon coriander powder
* 1/4 teaspoon garam masala
* 1/2 teaspoon salt, or to taste
* 2 tablespoons oil
* 1 tablespoon cashew nuts
* 1 tablespoon cream (optional)
* Fresh cilantro, for garnish
Instructions:
* Grind the Gravy Base:
* In a blender, combine chopped tomatoes, cashews, ginger, garlic, and a pinch of salt. Blend to a smooth paste.
* Sauté the Onions:
* Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
* Add chopped onions and sauté until softened and golden brown.
* Add Spices and Tomato Paste:
* Add turmeric powder, red chili powder, coriander powder, and garam masala. Sauté for a minute, stirring constantly.
* Add the blended tomato-cashew paste and cook, stirring occasionally, until the oil separates from the masala.
* Add Paneer and Simmer:
* Add paneer cubes to the gravy. Stir gently to coat the paneer with the sauce.
* Cover and simmer for 5-7 minutes, or until the paneer is heated through and the gravy has thickened slightly.
* Add Cream (Optional):
* Stir in cream and cook for another minute, or until the cream is incorporated.
* Serve:
* Garnish with fresh cilantro and serve hot with rice, roti, or naan.
Tips:
* For a richer flavor, you can add a spoonful of cashew paste or cream to the gravy.
* Adjust the amount of red chili powder to your desired level of spiciness.
* You can add other vegetables to this dish, such as bell peppers, peas, or cauliflower.
* If the gravy becomes too thick, add a little water or cream.
