Instructions
1. Prepare the Pea Shoots:
Rinse the pea shoots thoroughly under cold water to remove any dirt. Drain and pat dry.
2. Heat the Oil:
Heat olive oil or sesame oil in a large skillet or wok over medium heat.
3. Sauté the Garlic:
Add minced garlic to the pan and sauté for 20–30 seconds until fragrant.
4. Add the Pea Shoots:
Increase the heat to medium-high. Add the pea shoots to the pan and toss quickly to coat them in the garlic and oil.
5. Season:
Add salt and black pepper (or red chili flakes) to taste. If using soy sauce, drizzle it over the shoots and mix well.
6. Cook Briefly:
Cook for 1–2 minutes, just until the pea shoots are wilted but still bright green. Avoid overcooking to retain their crisp texture.
7. Serve:
Remove from heat and serve immediately as a side dish or over steamed rice.
