Paneer Pasanda

Paneer Pasanda is a rich and creamy Mughlai dish featuring succulent paneer cubes simmered in a velvety cashew-based gravy. Here's a recipe to try:

Ingredients:

 * For the Paneer:

   * 250g paneer, cut into 1-inch cubes

   * 1/4 cup all-purpose flour

   * 1/4 cup breadcrumbs

   * Salt to taste

   * Oil for frying

 * For the Gravy:

   * 2 tablespoons ghee or oil

   * 1 large onion, finely chopped

   * 2 cloves garlic, minced

   * 1-inch ginger, grated

   * 1/2 teaspoon cumin seeds

   * 1/2 teaspoon coriander powder

   * 1/4 teaspoon turmeric powder

   * 1/4 teaspoon red chili powder

   * 1/2 teaspoon garam masala

   * 1 (14.5 ounce) can diced tomatoes, undrained

   * 1/2 cup cashew nuts, soaked in water for 30 minutes

   * 1/4 cup cream

   * 1/2 cup water

   * Salt to taste

   * Fresh coriander leaves for garnish

Instructions:

 * Prepare the Paneer:

   * Mix paneer cubes with salt and set aside for 15 minutes.

   * Coat each paneer cube in flour, then dip in water, and finally coat with breadcrumbs.

   * Heat oil in a pan and shallow fry the paneer cubes until golden brown. Drain on paper towels.

 * Make the Gravy:

   * Heat ghee or oil in a pan. Add cumin seeds and let them sizzle.

   * Add chopped onions and sauté until golden brown.

   * Add minced garlic and grated ginger. Sauté for a minute until fragrant.

   * Add diced tomatoes and cook until they soften and release their juices.

   * Blend the soaked cashews with a little water to make a smooth paste.

   * Add the cashew paste, turmeric powder, coriander powder, red chili powder, and garam masala to the pan. Cook for a minute.

   * Add water and bring to a boil. Reduce heat and simmer for 10-15 minutes, or until the gravy thickens slightly.

   * Add cream and simmer for 2-3 minutes more.

 * Combine and Serve:

   * Add the fried paneer cubes to the gravy. Simmer for 5 minutes, allowing the flavors to meld.

   * Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti.

Tips:

 * For a richer flavor, you can add a few saffron strands to the gravy.

 * Adjust the amount of spices according to your taste.

 * You can use cashew nuts or almonds for the gravy.

 * Serve with a side of raita or salad for a refreshing accompaniment.
