Here's a basic recipe for Paneer Kathi Roll:

Ingredients:

 * For the Paneer Filling:

   * 200g paneer, cubed

   * 1 onion, thinly sliced

   * 1 green bell pepper, thinly sliced

   * 1/2 teaspoon garam masala

   * 1/4 teaspoon red chili powder

   * 1/4 teaspoon turmeric powder

   * Salt to taste

   * 2 tablespoons oil

 * For the Roll:

   * 4-6 roti or paratha (Indian flatbread)

   * Green chutney (coriander and mint chutney)

   * Red chutney (spicy tomato chutney)

   * Sliced onions

   * Chopped cilantro

Instructions:

 * Marinate Paneer: In a bowl, combine paneer cubes with garam masala, red chili powder, turmeric powder, and salt. Mix well and let it marinate for at least 30 minutes.

 * Cook Paneer Filling: Heat oil in a pan. Add sliced onions and bell pepper and saute until softened. Add the marinated paneer and cook for 5-7 minutes, or until lightly browned.

 * Assemble the Roll: Heat a tawa or griddle. Place a roti or paratha on the tawa for a few seconds to warm it up.

 * Spread Chutneys: Spread green chutney and red chutney evenly on the roti.

 * Add Filling: Top with cooked paneer, sliced onions, and chopped cilantro.

 * Roll: Carefully roll the roti tightly, tucking in the sides to prevent the filling from spilling out.

 * Grill (optional): Lightly grill the rolled roti on the tawa for a few seconds to crisp it up.

 * Serve: Cut the roll in half and serve immediately.

Tips:

 * You can add other vegetables to the filling, such as carrots, cabbage, or mushrooms.

 * For extra flavor, add a pinch of chaat masala to the paneer filling.

 * You can use store-bought rotis or parathas for convenience.

 * Serve the rolls with additional chutneys, lemon wedges, and chopped onions on the side.
