Ingredients:
* 1 tablespoon olive oil
* 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 cup long-grain rice
* 1 (14.5 ounce) can diced tomatoes, undrained
* 1 (14.5 ounce) can chicken broth
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* Optional: 1/4 cup chopped fresh parsley
Instructions:
* Heat oil and cook chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned, about 5 minutes.
* Add vegetables and cook: Add onion and garlic to the pot and cook until softened, about 5 minutes more.
* Add rice and cook: Stir in rice, diced tomatoes, chicken broth, oregano, salt, and pepper. Bring to a boil.
* Simmer and cover: Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is tender and liquid is absorbed.
* Rest and serve: Remove from heat and let stand for 5 minutes before fluffing with a fork. Garnish with parsley, if desired.
