Ingredients:
For the Dough:
* 1 1/2 cups all-purpose flour (maida)
* 1/4 teaspoon salt
* 1 tablespoon oil
* Water for kneading
For the Filling:
* 1/2 head of cabbage, finely chopped
* 1 carrot, finely chopped
* 1/4 cup chopped spring onions (green part)
* 2 cloves garlic, minced
* 1 inch ginger, minced
* 1 teaspoon soy sauce
* 1/2 teaspoon black pepper powder
* Salt to taste
* Oil for cooking
Instructions:
1. Make the Dough:
* In a bowl, combine flour, salt, and oil. Gradually add water and knead to form a smooth and pliable dough.
* Cover the dough with a damp cloth and let it rest for 30 minutes.
2. Prepare the Filling:
* Heat oil in a pan. Add garlic and ginger and sauté for a few seconds.
* Add chopped cabbage, carrot, and spring onions. Sauté for 5-7 minutes until the vegetables are softened but still retain some crunch.
* Add soy sauce, black pepper powder, and salt. Mix well and let the filling cool down.
3. Shape the Momos:
* Roll out the dough into thin circles using a rolling pin.
* Place a spoonful of filling in the center of each circle.
* Bring the edges of the dough together to form pleats or folds, sealing the filling inside.
* Repeat with the remaining dough and filling.
4. Steam the Momos:
* Bring a steamer or pot of water to a boil.
* Place the momos in the steamer basket and steam for 10-12 minutes, or until cooked through.
5. Serve:
* Serve hot with your favorite dipping sauce, such as momo chutney (made with tomatoes, onions, and spices) or schezwan sauce.
Tips:
* For extra flavor, add a pinch of garam masala or chili flakes to the filling.
* You can also add other vegetables to the filling, such as mushrooms, spinach, or bell peppers.
* If you don't have a steamer, you can use a large pot with a colander or a plate placed inside.

Note: This recipe is for vegetarian momos. You can also make chicken or pork momos by substituting the vegetable filling with minced meat.
