Coconut Flour Cookies

Coconut Flour Cookies are a delicious and gluten-free alternative to traditional cookies. Coconut flour is absorbent and adds a lovely coconut flavor, making these cookies soft and chewy. Here’s a simple recipe for vegan coconut flour cookies:

Ingredients:

1/2 cup coconut flour

1/4 cup coconut sugar (or maple syrup)

1/4 cup coconut oil (melted) or vegan butter

1/4 cup non-dairy milk (such as almond, oat, or coconut milk)

1 tsp vanilla extract

1/2 tsp baking soda

1/4 tsp salt

1/4 cup shredded unsweetened coconut (optional, for extra texture)

1/4 cup dark chocolate chips, chopped nuts, or raisins (optional, for added flavor)

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C).

Line a baking sheet with parchment paper.

2. Mix the Wet Ingredients:

In a medium bowl, combine the melted coconut oil (or vegan butter), non-dairy milk, coconut sugar, and vanilla extract. Stir until well mixed.

3. Add the Dry Ingredients:

In a separate bowl, whisk together the coconut flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and stir until well combined. The dough will be thick due to the absorbent nature of coconut flour.

If desired, fold in shredded coconut, chocolate chips, nuts, or raisins for extra texture and flavor.

4. Shape the Cookies:

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Gently press each ball down with your fingers or the back of a spoon to flatten them slightly, as these cookies won’t spread much during baking.

5. Bake the Cookies:

Bake for 8-10 minutes, or until the edges are golden brown and the center is set.

Keep a close eye on them to prevent overbaking, as coconut flour cookies can brown quickly.

6. Cool and Serve:

Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.

Enjoy your soft, chewy coconut flour cookies!

Tips:

Storage: Store these cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They also freeze well for longer storage.

Add-ins: Customize your cookies with your favorite mix-ins, such as dried fruit, chocolate chips, or nuts.

Texture: Coconut flour can make cookies a bit drier, so don't be tempted to add more flour. If you prefer a chewier texture, you can add an extra tablespoon of non-dairy milk.

These Coconut Flour Cookies are a delicious and healthier cookie option, with a coconutty flavor and a chewy texture that’s perfect for any cookie craving!
