Misal Pav

Misal Pav is a popular Maharashtrian street food consisting of a spicy curry of mixed sprouts (matki) served with pav (bread rolls). Here's a basic recipe:

Yields: 4 servings

Prep time: 20 minutes

Cook time: 30 minutes

Ingredients:

 * 1 cup matki (sprouted moth beans)

 * 1 large onion, chopped

 * 2 cloves garlic, minced

 * 1-inch piece ginger, minced

 * 2 medium tomatoes, chopped

 * 1 teaspoon cumin seeds

 * 1/2 teaspoon turmeric powder

 * 1/4 teaspoon red chili powder (adjust to taste)

 * 1/2 teaspoon coriander powder

 * 1/4 teaspoon garam masala

 * 1/2 teaspoon salt, or to taste

 * 2 tablespoons oil

 * 1 tablespoon chopped cilantro, for garnish

 * 4 pav (bread rolls)

 * Farsan (savory snack mix) for garnish

 * Lemon wedges for serving

Instructions:

 * Cook the Matki:

   * Pressure cook the matki with a little salt and turmeric powder for 2-3 whistles.

   * Let the pressure release naturally.

 * Sauté the Aromatics:

   * Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.

   * Add chopped onions and sauté until softened and translucent.

   * Add minced garlic and ginger and cook for another minute until fragrant.

 * Add Tomatoes and Spices:

   * Add chopped tomatoes and cook until they soften and release their juices.

   * Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir well to combine.

 * Combine and Simmer:

   * Add the cooked matki to the pan. Stir well to combine.

   * Simmer for 5-7 minutes, or until the flavors meld together.

   * Add salt to taste and adjust the consistency with a little water if needed.

 * Serve:

   * Serve hot with pav, garnished with chopped cilantro, farsan, and lemon wedges.

Tips:

 * For a richer flavor, you can add a spoonful of cashew paste or cream to the gravy.

 * Adjust the amount of red chili powder to your desired level of spiciness.

 * You can add other vegetables to this dish, such as potatoes or peas.

 * Traditionally, Misal Pav is served with a spicy "tarri" (gravy) made with a blend of chilies and other spices.
