Mango Chutney Recipe

 

Mango chutney is a versatile condiment that adds a burst of flavor to various dishes. Here's a basic recipe you can adapt to your liking:

Ingredients:

 * 2 medium ripe mangoes, peeled, pitted, and chopped

 * 1/2 cup white vinegar

 * 1/4 cup granulated sugar

 * 1/4 cup chopped onion

 * 2 cloves garlic, minced

 * 1-inch piece ginger, grated

 * 1 teaspoon cumin seeds

 * 1/2 teaspoon red chili powder (adjust to taste)

 * 1/4 teaspoon turmeric powder

 * Salt to taste

 * 1 tablespoon oil

Instructions:

 * Heat the oil: Heat oil in a saucepan over medium heat. Add cumin seeds and let them sizzle for a few seconds.

 * Sauté the aromatics: Add chopped onion, minced garlic, and grated ginger. Sauté until the onion softens and turns translucent.

 * Combine ingredients: Add chopped mangoes, white vinegar, sugar, red chili powder, turmeric powder, and salt. Stir well to combine.

 * Simmer: Bring the mixture to a simmer, then reduce heat and cook for 20-25 minutes, or until the mangoes soften and the chutney thickens slightly. Stir occasionally to prevent sticking.

 * Cool and store: Let the chutney cool completely before transferring it to a sterilized jar. Store in the refrigerator for up to 2 weeks.

Tips:

 * For a spicier chutney, add more red chili powder or a chopped green chili.

 * To make a sweeter chutney, increase the amount of sugar.

 * For a tangier chutney, use more vinegar.

 * You can add other ingredients to the chutney, such as chopped cilantro, curry leaves, or a pinch of garam masala.

 * If you prefer a smoother chutney, you can blend it using a blender or food processor.
