Brown Rice Dosa
This recipe offers a healthier twist on the classic South Indian breakfast staple, using nutritious brown rice instead of white rice.

Ingredients:
* 1 cup brown rice
* 1/2 cup urad dal (split black gram)
* 1 tablespoon chana dal (split Bengal gram)
* 1 teaspoon fenugreek seeds (methi)
* Salt to taste
* Water for soaking and grinding
* Oil for cooking
Instructions:
* Soaking:
* Wash the brown rice, urad dal, chana dal, and fenugreek seeds thoroughly under running water.
* Soak all the ingredients together in enough water for at least 6-8 hours, or overnight.
* Grinding:
* Drain the soaked ingredients and grind them separately in a blender or grinder, adding water gradually to achieve a smooth batter.
* The urad dal batter should be slightly thinner than the brown rice batter.
* Mixing and Fermenting:
* Combine the urad dal batter and brown rice batter in a large bowl.
* Add salt to taste and mix well.
* Cover the bowl with a lid or a clean cloth and let it ferment in a warm place for 8-12 hours, or until it becomes slightly bubbly.
* Making the Dosa:
* Heat a non-stick tawa or dosa pan over medium heat.
* Pour a ladleful of batter onto the hot tawa and spread it evenly in a circular motion to form a thin, round crepe.
* Drizzle a little oil around the edges and cook until the edges turn golden brown and the dosa peels away easily from the tawa.
* Flip the dosa and cook for a few seconds on the other side.
* Serving:
* Serve hot with sambar, chutney, or your favorite accompaniments.
Tips:
* For a crispier dosa, use a slightly thicker batter.
* If the batter is too thick, add a little water and mix well.
* Adjust the fermentation time based on the temperature of your kitchen.
* You can add a pinch of asafoetida (hing) to the batter for extra flavor.
* Experiment with different types of brown rice for variations in taste and texture.
