 Kheer (Rice Pudding)

Kheer is a classic Indian dessert made with rice, milk, sugar, and spices. It's often served warm or chilled and is a popular offering during festivals and special occasions.

Ingredients:

 * 1/4 cup rice (basmati or any short-grain rice)

 * 4 cups milk

 * 1/4 cup sugar (or to taste)

 * 1/4 teaspoon cardamom powder

 * A pinch of saffron (optional)

 * 1 tablespoon chopped nuts (almonds, pistachios, cashews)

 * Raisins (optional)

Instructions:

 * Wash and soak the rice: Rinse the rice in a sieve under running water until the water runs clear. Soak the rice in water for at least 30 minutes.

   

 * Boil the milk: In a heavy-bottomed pot, bring the milk to a boil over medium heat.

   

 * Add the rice: Drain the soaked rice and add it to the boiling milk. Reduce heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the milk has reduced slightly. Stir occasionally to prevent the rice from sticking to the bottom of the pot.

   

 * Add sugar and spices: Once the rice is cooked, add sugar and cardamom powder. Stir well and cook for another 5-7 minutes, or until the sugar dissolves and the kheer thickens slightly.

   

 * Add saffron (optional): If using saffron, steep it in a tablespoon of warm milk for a few minutes. Add the saffron-infused milk to the kheer.

   

 * Garnish and serve: Remove from heat and let the kheer cool slightly. Garnish with chopped nuts and raisins (if using). Serve warm or chilled.

Tips:

 * For a richer flavor, you can use full-fat milk or add a tablespoon of condensed milk.

 * You can adjust the amount of sugar to your taste.

 * To make the kheer extra creamy, you can add a tablespoon of ghee or butter.

 * You can add other flavorings like rose water, kewra water, or a pinch of nutmeg.
