Dabeli is a popular street food snack from India, particularly from the Kutch region of Gujarat. It's a delicious combination of flavors and textures, featuring a spiced potato filling sandwiched between a pav (bread roll) and topped with various chutneys and garnishes.

Ingredients:

 * For the Potato Filling:

   * 4 medium-sized potatoes, boiled and mashed

   * 1 tablespoon oil

   * 1 teaspoon cumin seeds

   * 1/2 teaspoon turmeric powder

   * 1/4 teaspoon red chili powder

   * 1/4 teaspoon garam masala

   * Salt to taste

   * 1/4 cup chopped coriander leaves

   * 1 tablespoon lemon juice

 * For the Green Chutney:

   * 1 cup coriander leaves

   * 2 green chilies

   * 1 inch ginger

   * 1 clove garlic

   * 1/2 lemon, juiced

   * Salt to taste

   * Water as needed

 * For the Tamarind Chutney:

   * 1/4 cup tamarind pulp

   * 1/4 cup jaggery

   * 1/2 teaspoon red chili powder

   * 1/4 teaspoon cumin powder

   * Salt to taste

   * Water as needed

 * Other Ingredients:

   * 4 pav (bread rolls)

   * 1/4 cup sev (optional)

   * 1/4 cup chopped onions

   * 1/4 cup chopped tomatoes

   * Pomegranate seeds (optional)

   * Chaat masala to taste

Instructions:

 * Make the Potato Filling:

   * Heat oil in a pan. Add cumin seeds and let them splutter.

   * Add turmeric powder, red chili powder, and garam masala. Sauté for a few seconds.

   * Add mashed potatoes, salt, and lemon juice. Mix well and cook for 2-3 minutes, or until the flavors are combined.

   * Add chopped coriander leaves and mix again.

 * Make the Green Chutney:

   * In a blender, combine coriander leaves, green chilies, ginger, garlic, lemon juice, and salt. Add a little water and blend to a smooth paste.

 * Make the Tamarind Chutney:

   * Soak tamarind pulp in warm water for 15 minutes.

   * In a saucepan, combine tamarind water, jaggery, red chili powder, cumin powder, and salt. Cook for 5-7 minutes, or until the jaggery dissolves and the chutney thickens slightly.

 * Assemble the Dabeli:

   * Cut the pav in half horizontally.

   * Spread a layer of green chutney on the bottom half of the pav.

   * Top with a generous amount of potato filling.

   * Drizzle with tamarind chutney.

   * Garnish with sev, chopped onions, tomatoes, pomegranate seeds, and chaat masala.

Serve immediately and enjoy the delicious Dabeli!

Tips:

 * You can adjust the spice level of the chutneys according to your preference.

 * For a richer flavor, you can add a pinch of garam masala to the potato filling.

 * You can use store-bought pav or make your own at home.

 * Dabeli is best enjoyed fresh.
