Green Beans and Potatoes (Aloo Beans) recipe

 

Aloo beans, also known as green beans and potatoes, is a popular Indian vegetarian dish. It's a simple yet flavorful curry made with potatoes, green beans, and a blend of warm spices.


Here's a basic recipe for Aloo Beans:

Ingredients:

 * 2 large potatoes, peeled and cubed

 * 2 cups green beans, trimmed and cut into 1-inch pieces

 * 1 large onion, chopped

 * 2 medium tomatoes, chopped

 * 2 green chilies, slit lengthwise (optional)

 * 1 teaspoon ginger-garlic paste

 * 1 teaspoon cumin seeds

 * 1/2 teaspoon turmeric powder

 * 1/2 teaspoon red chili powder

 * 1/4 teaspoon garam masala

 * 1/4 teaspoon coriander powder

 * Salt to taste

 * 2 tablespoons oil

 * Fresh cilantro for garnish

Instructions:

 * Heat oil in a pan or pot over medium heat. Add cumin seeds and let them splutter.

 * Add chopped onions and saute until golden brown.

 * Add ginger-garlic paste and green chilies (if using) and cook for a minute.

 * Add chopped tomatoes and cook until they soften and release their juices.

 * Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and cook for a minute.

 * Add cubed potatoes and green beans. Mix well with the spices.

 * Add enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer until the potatoes and green beans are tender.

 * Season with salt to taste.

 * Garnish with fresh cilantro and serve hot with rice, roti, or naan.

Tips:

 * For a richer flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.

 * To make the curry slightly tangy, add a pinch of amchur powder (dried mango powder) towards the end.

 * You can adjust the amount of spices according to your preference.

 * If you like your curry slightly thicker, you can add a tablespoon of besan (gram flour) while simmering.
