Classic Drop Dumplings
This recipe is for simple, classic drop dumplings that are perfect for adding to soups, stews, and chili.
Yields: About 12 dumplings
Prep time: 10 minutes
Cook time: 15-20 minutes
Ingredients:
* 1 cup all-purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 3 tablespoons shortening or butter
* 3/4 cup milk
Instructions
* Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
* Cut in shortening: Cut in shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
* Add milk: Stir in milk until moistened. The dough will be lumpy, but don't overmix.
* Drop into simmering liquid: Drop by large spoonfuls onto any simmering stew or soup. The dumplings should rest on top of the vegetables and meat; it's okay if they stick out of the top a bit.
* Cook: Cook uncovered for 10 minutes. Cover and cook for another 10 minutes, or until cooked through.
Tips:
* Adjust thickness: If the dough is too thick, add a little more milk. If it's too thin, add a little more flour.
* Get creative: Add herbs or spices to the dough for extra flavor, such as garlic powder, onion powder, or dried herbs.
* Serve immediately: Dumplings are best enjoyed hot and fresh.
