Crock Pot Buffalo Chicken Dip

 Yields: 6-8 servings

Prep time: 15 minutes

Cook time: 2-3 hours on High

Ingredients:

 * 3 cups cooked and shredded chicken (rotisserie chicken works great!)

 * 8 ounces cream cheese, softened and cut into cubes

 * 1 cup ranch dressing

 * 1/2 cup Frank's RedHot or your favorite hot sauce

 * 1 1/2 cups shredded cheddar cheese

 * 1/2 cup crumbled blue cheese (optional)

 * 1/4 cup chopped green onions, for garnish

Instructions:

 * Combine ingredients: In a slow cooker, combine shredded chicken, cream cheese, ranch dressing, hot sauce, and 1 cup of shredded cheddar cheese. Stir until well combined.

   

 * Cook: Cover and cook on High for 2-3 hours, or until the cream cheese is melted and the dip is heated through. Stir occasionally.

   

 * Top and serve: Stir in the remaining 1/2 cup of shredded cheddar cheese and crumbled blue cheese (if using). Garnish with chopped green onions. Serve warm with tortilla chips, celery sticks, and carrot sticks.

   

Tips & Variations:

 * Spice it up: Add a few dashes of hot sauce or a pinch of cayenne pepper for extra heat.

 * Creamy option: Add a tablespoon or two of sour cream to the dip for a richer, creamier texture.
