This light and refreshing salad is perfect for a summer meal. The sweet and savory flavors of the berries, chicken, and vinaigrette come together beautifully.

Ingredients:

 * For the Salad:

   * 1 cup quinoa, cooked and cooled

   * 2 cups cooked and shredded chicken

   * 1 cup chopped strawberries

   * 1/2 cup blueberries

   * 1/4 cup chopped red onion

   * 1/4 cup chopped fresh mint

   * 1/4 cup chopped walnuts or almonds (toasted)

   * 1/4 cup crumbled feta cheese

 * For the Vinaigrette:

   * 1/4 cup balsamic vinegar

   * 2 tablespoons olive oil

   * 1 tablespoon honey or maple syrup

   * 1 tablespoon strawberry jam

   * 1/2 teaspoon Dijon mustard

   * Salt and pepper to taste

Instructions:

 * Make the Vinaigrette: In a jar with a tight-fitting lid, combine balsamic vinegar, olive oil, honey or maple syrup, strawberry jam, Dijon mustard, salt, and pepper. Shake vigorously until well combined.

 * Combine Salad Ingredients: In a large bowl, combine cooked quinoa, shredded chicken, strawberries, blueberries, red onion, mint, walnuts or almonds, and feta cheese.

 * Toss with Vinaigrette: Pour the desired amount of vinaigrette over the salad and toss gently to coat.

 * Serve: Serve immediately or chill for later.
