Ingredients:
* 1 cup all-purpose flour
* 2 large eggs
* 1 cup milk
* 1/4 cup water
* 2 tablespoons melted butter, plus more for cooking
* Pinch of salt
* Optional: 1 tablespoon sugar (for sweet crepes)
Instructions
* Combine ingredients: In a blender or large bowl, whisk together flour, eggs, milk, water, melted butter, salt, and sugar (if using) until smooth. Let the batter rest for at least 30 minutes at room temperature (or up to 8 hours in the refrigerator).
* Heat the pan: Heat a lightly oiled non-stick skillet or crepe pan over medium heat.
* Cook the crepes: Pour about 1/4 cup of batter into the hot pan, tilting and swirling the pan to evenly coat the bottom. Cook for 1-2 minutes, or until the bottom is set and lightly browned.
* Flip and cook: Flip the crepe and cook for an additional 30 seconds to 1 minute, or until lightly browned on the other side.
* Repeat: Remove the crepe from the pan and repeat with the remaining batter, adding more oil to the pan as needed.
* Serve: Fill crepes with your favorite sweet or savory fillings and enjoy!
Tips:
* For thinner crepes, use a slightly thinner batter.
* If the batter is too thick, add a little more milk or water.
* If the batter is too thin, add a little more flour.
* Use a wide spatula to flip the crepes.
* Keep cooked crepes warm in a single layer on a baking sheet in a low oven while you cook the rest.
