 1. Roasted Zucchini

 * Ingredients:

   * In a large bowl, combine flour, sugar, baking soda, salt, cinnamon, and nutmeg.

   * In a separate bowl, whisk together oil, milk, egg, and vanilla extract.

   * Add wet ingredients to dry ingredients and mix until just combined.

   * Stir in zucchini and walnuts (if using).

   * Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

   * Let cool in pan for 10 minutes before removing and slicing.
