classic Manchow Soup recipe

 Here's a recipe for a classic Manchow Soup:

Ingredients:

 * 2 tablespoons oil

 * 1 tablespoon ginger-garlic paste

 * 1 onion, finely chopped

 * 1/2 cup cabbage, finely chopped

 * 1/4 cup carrots, finely chopped

 * 1/4 cup bell peppers (any color), finely chopped

 * 1/4 cup green beans, finely chopped

 * 1/4 cup mushrooms (optional), sliced

 * 1 teaspoon soy sauce

 * 1 teaspoon vinegar

 * 1/2 teaspoon red chili sauce

 * 1/4 teaspoon black pepper

 * Salt to taste

 * 1 tablespoon cornstarch

 * 1 tablespoon water

 * 1/4 cup chopped spring onions (for garnish)

 * Fried noodles (for garnish)

Instructions:

 * Sauté vegetables: Heat oil in a pot or wok. Add ginger-garlic paste and sauté for a few seconds. Add onion and sauté until softened.

 * Add remaining vegetables: Add cabbage, carrots, bell peppers, green beans, and mushrooms (if using). Sauté for 2-3 minutes until slightly softened.

 * Add water and seasonings: Pour 4 cups of water (or vegetable broth) into the pot. Add soy sauce, vinegar, red chili sauce, black pepper, and salt. Bring to a boil.

 * Thicken the soup: In a small bowl, mix cornstarch with water to form a slurry. Gradually add the cornstarch slurry to the boiling soup, stirring constantly, until the soup thickens slightly.

 * Simmer and serve: Reduce heat to low, simmer for 5 minutes, and then remove from heat. Garnish with chopped spring onions and fried noodles.

Tips:

 * For a spicier soup, add more red chili sauce or a pinch of red chili flakes.

 * You can adjust the amount of vegetables according to your preference.

 * To make it vegetarian, use vegetable broth instead of chicken or beef broth.
