 Chocolate Protein Truffles are a delicious, guilt-free treat that combines the richness of chocolate with the power of protein. These truffles are vegan, easy to make, and make for an ideal post-workout snack or a healthier dessert. Here’s a simple recipe to make them:


Ingredients:


1 cup rolled oats (gluten-free if needed)


1/2 cup vegan chocolate protein powder (or any plant-based protein powder)


2 tbsp unsweetened cocoa powder


1/4 cup almond butter (or peanut butter)


2 tbsp maple syrup (or agave nectar)


1/4 cup non-dairy milk (such as almond, oat, or soy milk)


1 tsp vanilla extract


Pinch of salt


1/4 cup vegan chocolate chips (optional, for extra chocolatey goodness)



For Rolling (optional):


Unsweetened cocoa powder, shredded coconut, or chopped nuts (such as almonds or walnuts)



Instructions:


1. Mix the Ingredients:


In a large bowl, combine the rolled oats, protein powder, cocoa powder, and a pinch of salt. Stir until well mixed.


Add the almond butter, maple syrup, non-dairy milk, and vanilla extract. Stir until everything is fully combined into a dough-like mixture. If the mixture feels too dry, add a little more non-dairy milk, 1 teaspoon at a time, until you can form a sticky dough.


If you're adding chocolate chips, fold them into the mixture.



2. Shape the Truffles:


Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls with your hands.


If you like, roll the truffles in cocoa powder, shredded coconut, or chopped nuts to coat them for added flavor and texture.



3. Chill the Truffles:


Place the truffles on a plate or baking sheet lined with parchment paper.


Refrigerate for at least 30 minutes to allow the truffles to firm up.
