Chocolate-Peppermint Puppy Chow

 Yields: About 8 cups

Prep time: 15 minutes

Chill time: 10 minutes

Ingredients:

 * 6 cups Rice Chex cereal

 * 12 ounces semisweet chocolate chips

 * 1/4 cup creamy peanut butter

 * 1 teaspoon peppermint extract

 * 1 1/2 cups powdered sugar

Instructions:

 * Melt Chocolate: In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring in between, until smooth. Stir in peanut butter and peppermint extract until well combined.

   

 * Combine with Cereal: Pour melted chocolate mixture over cereal in a large bowl. Stir gently until cereal is evenly coated.

   

 * Coat with Powdered Sugar: Pour half of the powdered sugar into a large Ziploc bag. Add the chocolate-coated cereal and shake to coat. Pour onto a baking sheet lined with parchment paper.

   

 * Repeat: Repeat with the remaining powdered sugar and cereal.

   

 * Chill: Chill in the refrigerator for at least 10 minutes before serving.

Tips:

 * For extra peppermint flavor, add crushed candy canes to the cereal mixture.

 * Use different types of cereal, such as Corn Chex or Cheerios, for variety.

 * Store in an airtight container at room temperature for up to a week.
