Ingredients:

 * For the Chicken:

   * 1.5 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

   * 1 teaspoon garam masala

   * 1/2 teaspoon turmeric

   * 1/4 teaspoon red chili powder

   * 1/4 teaspoon salt

   * 1 tablespoon plain yogurt

   * 1 tablespoon lemon juice

 * For the Sauce:

   * 1 tablespoon butter

   * 1 tablespoon olive oil

   * 1 large onion, finely chopped

   * 2 cloves garlic, minced

   * 1-inch piece ginger, grated

   * 1 (14.5 ounce) can diced tomatoes, undrained

   * 1 (10 ounce) can tomato puree

   * 1 cup heavy cream

   * 1/2 cup water

   * 1 teaspoon garam masala

   * 1/2 teaspoon cumin powder

   * 1/4 teaspoon coriander powder

   * 1/4 teaspoon cayenne pepper (optional)

   * Salt to taste

   * Fresh cilantro, for garnish

Instructions:

 * Marinate the Chicken: In a bowl, combine chicken pieces with garam masala, turmeric, chili powder, salt, yogurt, and lemon juice. Mix well to coat and marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

 * Make the Sauce: Heat butter and olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.

 * Blend the Tomatoes: In a blender, combine diced tomatoes, tomato puree, and water. Blend until smooth.

 * Simmer the Sauce: Pour the blended tomato mixture into the skillet with the onions. Add garam masala, cumin powder, coriander powder, cayenne pepper (if using), and salt. Bring to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.

 * Cook the Chicken: Add the marinated chicken pieces to the sauce. Cook for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.

 * Serve: Stir in heavy cream and cook for 1-2 minutes more, until the cream is heated through. Garnish with fresh cilantro and serve hot with steamed rice, naan, or roti.

Tips:

 * For a richer flavor, use bone-in chicken pieces.

 * Adjust the amount of chili powder to your desired spice level.

 * Add a pinch of sugar to balance the acidity of the tomatoes.

 * Garnish with a dollop of plain yogurt or a sprinkle of chopped cashews.
