Ingredients:
* 1 baguette, cut into 1/2-inch thick slices
* 2 tablespoons olive oil
* 2 cloves garlic, minced
* 1 pint cherry or grape tomatoes, halved
* 1/4 cup chopped fresh basil
* 2 tablespoons balsamic vinegar
* Salt and pepper to taste
Instructions:
* Preheat oven or broiler: Preheat oven to 400°F (200°C) or set broiler to high.
* Toast bread: Arrange bread slices on a baking sheet and drizzle with olive oil. Toast in the oven or broil until golden brown and slightly crisp, about 5-7 minutes.
* Make tomato mixture: While bread is toasting, combine tomatoes, basil, balsamic vinegar, minced garlic, salt, and pepper in a bowl. Toss to coat.
* Assemble bruschetta: Rub each toasted bread slice with a cut side of the remaining garlic clove. Top each slice with a generous amount of tomato mixture.
* Serve immediately: Serve bruschetta warm and enjoy!
Tips:
* For extra flavor, add a pinch of red pepper flakes to the tomato mixture.
* If you don't have fresh basil, you can use 1 teaspoon dried basil.
* To make the bruschetta ahead of time, prepare the tomato mixture and store it in the refrigerator for up to 24 hours. Toast the bread and assemble the bruschetta just before serving.
Enjoy your delicious homemade bruschetta!
