Sarah’s White Chicken Chili

Sarah’s White Chicken Chili is a delicious and comforting dish that's packed with tender chicken, creamy beans, and a flavorful blend of spices. It's perfect for a cozy dinner, and it's lighter than traditional chili while still being hearty and satisfying. Here's a simple recipe to make it:

Ingredients:

1 lb boneless, skinless chicken breasts or thighs, diced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or great northern beans), drained and rinsed

1 can (4 oz) diced green chilies

1 cup corn kernels (fresh, frozen, or canned)

4 cups chicken broth

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon ground oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup heavy cream (optional, for creaminess)

1/2 cup shredded Monterey Jack or cheddar cheese (optional, for topping)

Fresh cilantro, for garnish (optional)

Crumbled tortilla chips, for garnish (optional)

Instructions:

1. Cook the chicken:

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced chicken to the pot and cook for about 6-8 minutes, until the chicken is browned on all sides and cooked through. Remove the chicken and set aside.

2. Sauté the vegetables:

In the same pot, add the chopped onion and cook for 5-7 minutes, until softened.

Add the minced garlic and cook for another 1-2 minutes, until fragrant.

3. Add the broth and spices:

Stir in the chicken broth, cumin, chili powder, oregano, garlic powder, salt, and pepper. Bring to a simmer.

4. Add the chicken and beans:

Return the cooked chicken to the pot, along with the drained beans, diced green chilies, and corn. Stir everything together.

5. Simmer:

Let the chili simmer for 20-30 minutes, allowing the flavors to meld together. If you like a thicker chili, you can mash some of the beans with the back of a spoon to create a creamier texture.

6. Finish with cream (optional):

For a creamier texture, stir in the heavy cream and cook for another 5 minutes.

7. Serve:

Ladle the chili into bowls and top with shredded cheese, fresh cilantro, and crumbled tortilla chips for added flavor and texture.

Sarah’s White Chicken Chili is a hearty and flavorful soup that’s both filling and comforting. With tender chicken, cre

amy beans, and a blend of spices, it's a perfect meal for any time of the year!
