Roasted Red Pepper Hummus Burgers are a flavorful, vegetarian option that combines the creamy texture of hummus with the savory taste of roasted red peppers for a delicious twist on a classic veggie burger. These burgers are easy to make and perfect for a healthy and satisfying meal.
Ingredients:
For the Burger Patties:
1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
1/2 cup roasted red peppers (from a jar or homemade), drained and chopped
1/4 cup breadcrumbs (use gluten-free if needed)
2 tablespoons tahini
1 tablespoon lemon juice
1 garlic clove, minced
1 tablespoon olive oil
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
1-2 tablespoons water (if needed to bind the mixture)
For the Toppings:
4 whole-wheat or regular hamburger buns
1/2 cup store-bought or homemade hummus (plain or roasted red pepper flavor)
Fresh spinach or lettuce
Sliced cucumber
Sliced tomato
Red onion slices
Feta cheese (optional)
Instructions:
1. Make the Burger Patties:
In a food processor, combine the chickpeas, roasted red peppers, breadcrumbs, tahini, lemon juice, garlic, olive oil, cumin, smoked paprika, salt, and pepper.
Pulse until the mixture is well-combined, but still chunky. If the mixture is too dry and not sticking together, add a little water, one tablespoon at a time, until it reaches a moldable consistency.
Transfer the mixture to a bowl and divide it into 4 portions. Form each portion into a patty, about 1/2-inch thick.
2. Cook the Patties:
Heat a non-stick skillet or grill pan over medium heat and add a little olive oil. Once hot, place the patties in the pan and cook for about 4-5 minutes on each side, until golden brown and crispy on the outside.
Alternatively, you can bake the patties. Preheat the oven to 375°F (190°C), place the patties on a parchment-lined baking sheet, and bake for 20-25 minutes, flipping halfway through.
3. Prepare the Buns and Toppings:
Toast the buns in the oven or on the grill for a couple of minutes until lightly browned.
Spread a layer of hummus on the bottom half of each bun.
Top with fresh spinach or lettuce, sliced cucumber, tomato, and red onion. If you like, add a little crumbled feta cheese on top of the veggies for added flavor.
4. Assemble the Burgers:
Place a roasted red pepper hummus patty on top of the prepared bun with toppings.
Add the top bun and press down gently to secure.
5. Serve:
Serve these Roasted Red Pepper Hummus Burgers with a side of sweet potato fries, a fresh salad, or pickles for a complete meal.
Tips:
Make it spicier: If you like heat, add a bit of harissa or chili flakes to the patty mixture.
Substitute the hummus: Try different flavors of hummus (such as spicy harissa or garlic) to suit your taste.
Make-ahead option: The patties can be made ahead of time and stored in the fridge for 1-2 days before cooking. You can also freeze uncooked patties for later use.
