Ingredients:


For the Muffins:

Instructions:


1. Preheat the Oven:


Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin with paper liners.




2. Prepare the Cornbread Batter:


In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.


In a separate bowl, mix together the milk, vegetable oil, egg, and mustard (if using). Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—lumps are okay.


If you’re adding cheese, fold it into the batter.




3. Assemble the Muffins:


Spoon a small amount of cornbread batter into each muffin cup (about 1/3 of the way full). Then, place a mini hot dog (or a piece of cut-up regular hot dog) into the center of each muffin cup, pushing it down slightly.


Top the hot dog with more cornbread batter until the muffin cups are about 2/3 full.




4. Bake:


Bake the mini corn dog muffins for 12-15 minutes, or until a toothpick inserted into the cornbread comes out clean and the muffins are golden brown. Keep an eye on them to avoid overbaking.




5. Cool and Serve:


Allow the muffins to cool slightly in the pan before transferring them to a wire rack. Serve them warm with ketchup and mustard on the side for dipping.
